I've heard it's legendary among locals, apparently, they have some seriously next-level onigiri there. My question is: what's the secret to their onigiri? Like, do they use some kind of ancient rice-cooking technique passed down through generations of onigiri masters, or something? I really wanna know what makes them so special, cause I'm planning a full-on onigiri crawl during my trip and I gotta start somewhere...

honestly the hype around that specific one is more about the turnover than any secret technique. it's in a busy office area so they restock constantly, meaning the rice is never sitting around getting hard. grab the salmon mentaiko one if they have it, the mayo keeps everything moist

Nah, it's probably not some ancient secret. Seven Elevens in Japan are just... amazing. They're way beyond what we have in other countries. Think ridiculously fresh ingredients, constantly rotating seasonal stuff, and probably just really good quality control. My guess is its the rice, maybe a special blend or a super precise cooking method, plus their fillings are top-notch. Don't overthink it, just go and enjoy the onigiri. You'll be hooked. Prepare for amazing things.

the thing about that specific seven eleven is theyre right next to a few small printing companies and a koban so the lunch rush is insane. the onigiri just fly off the shelves which means you're getting stuff that was made maybe an hour ago. their nori is still crispy when you bite in which is rare for convenience store onigiri. try the tarako one with the little shiso leaf wrapped inside, its a solid intro to what good konbini onigiri can be

Anyone know if they still do the Ethiopia on the hand pour or has it moved to the batch brew? Looking for something bright and fruity without the line at the big chains.

The Ethiopia's usually still on hand pour when I've been in, but it rotates fast so check the board before you queue. If it's gone, Koffee Mameya in Omotesando does a bright Kenyan filter worth the trip.

yeah the board is the thing to watch, and if it's wiped out, Glitch in Jimbocho pulls a solid fruity filter without the chain crowd

Fair point, though I'd add that Mameya's queue moves quicker right at 10am opening before the Omotesando shoppers arrive.

also worth knowing that hand pour there stops around 6pm so an evening run just gets the batch

Ask for the Wote lot specifically, it's brighter than the standard.

Weekends the board's wiped by noon, go Tuesday.

Good call on checking the board first. One thing worth knowing: Mameya's Kenyan is seasonal, so if it's off the list when you go, their staff will steer you to whatever's closest in profile. Worth asking rather than assuming.

Try Fuglen Tomigaya for a bright natural. Go weekday mornings.
