This Seven Eleven, right by the station, was a lifesaver. Found the strangest, most delicious onigiri I've ever had, some kind of pickled plum and seaweed thing. Crazy good. But seriously, was that just a limited edition thing, or can I expect that every time I stumble in there at 3 am?

That umeboshi onigiri is a year-round staple, you'll find it at pretty much any conbini in Tokyo. If you want to level up your jet lag snack game, head to the Don Quijote on the east side of Shinjuku station, it's open 24 hours and has a whole food section with stuff you won't see at Seven Eleven. Their mentaiko (spicy cod roe) onigiri is worth the walk, and you can grab a random gadget or a cheap hoodie while you're there.

honestly that specific onigiri is prob a regular item, 7-Eleven in Japan rotates their lineup but umeboshi (pickled plum) is a staple you'll find at most of them. the seaweed wrapping is standard too, they call it "umeboshi konbu" sometimes. if you want something wilder at 3am walk toward kabukicho, there's a 24-hour sushi spot called Sushizanmai near the Godzilla head that slaps harder than it should for the hour

The umeboshi onigiri is a permanent fixture, you'll see it at every conbini in the country. If you want something that's actually limited and worth hunting for at 3 AM, check the Lawson across from the Shinjuku Alta building. They sometimes stock a seasonal natto and mentaiko wrap that's absurdly good, and the staff there are used to dazed tourists pointing at things.

Where can I find crispy, pan-fried bacon similar to a certain international style?

While the local bacon works well in many recipes, I specifically want the crispy type. Where might I find this style of bacon?

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
