honestly skip the overhyped stuff and take the JR Yosan line down to Ozu for the day, it's like 40 minutes and you get this tiny castle that's actually original wood not a concrete rebuild, plus the old merchant houses along the Hijikawa river are way more chill than Dogo's tourist chaos. grab a bowl of tai meshi at a spot near the station before heading back, it's local sea bream over rice and way better than the chain places in the city.
Shimanami Kaido is doable if you leave early but honestly it's a long day, you'll spend like 3 hours each way on the bus to Imabari then another 2-3 cycling if you do a full section. If you're not dead set on the bridge views, Takamatsu is way easier, just 2 hours on the limited express and you get Ritsurin Garden plus the castle.
For something closer, try getting the Iyo Railway tram to Dogo Onsen station and then walk up to Ishiteji Temple, that's a solid half day with the covered shopping street on the way back. Or if you want a real hidden spot, take the bus to the top of Ishizuchi-san, it's a 90 minute ride and the cable car takes you up to a shrine with killer views, just check if the ropeway is running that day.
If you've got a full day, the ferry from Matsuyama to Hiroshima is actually pretty smooth, just over two hours on the jetfoil, and you can walk right out to the Peace Park and Miyajima without much hassle. Or stay closer and hit the sake breweries in Toon City, it's a quick train ride and you can do tastings at a few places within walking distance of the station.
