the benteng heritage museum is small but worth it, the guided tour in english only runs at certain hours though so ask at the front desk when you arrive. i went on a weekday and had to wait 45 minutes for the next one
for day 2 the breeze is nice for dinner but if you want something more local try the sate kambing at sate pak kumis near itc bsd, it's a 10 minute walk from the breeze and the meat is so tender it falls off the skewer. about 60k for a full portion
day 3's pasar lama is best in the morning like you said, the kue cubit guy near the main entrance has been there for years and his version is the fluffiest i've found. also the rendang at sari bundo is legit, i always grab an extra portion to take home
honestly this is a solid itinerary, i live in bsd and the day 2 route is pretty much what i do with visiting friends. one thing i'd add is that Tanataria Coffee can get packed on weekends so try to get there right when it opens or just skip it and go to Kofie Semarang instead, it's about 5 minutes away and their iced kopi susu is better imo
for day 3 the Cisadane river cruise is nice but the boats are these little wooden things and they can feel kinda shaky if you're not used to it. also the night market is more of a weekend thing, during weekdays it's smaller with fewer stalls so plan accordingly
