If you want something a bit different, head east to Nanyang's old town area. The Fuyang Mountain Temple complex is about 90 minutes out and has some well-preserved Ming dynasty architecture, plus a nice tea house where you can sit and watch the locals play chess. On the way back, stop at one of the roadside noodle stalls for a bowl of Wancheng-style lamian, it's chewier and more fragrant than the standard stuff you get in the city.
Head up to Wolonggang for the day, it's about an hour north. The dinosaur egg fossil site is genuinely impressive, they have over 10,000 specimens on display in the original dig location. Grab some local navel oranges from the stalls near the entrance, they're way better than what you'll find in the city markets.
You could drive south to the Danjiangkou Reservoir area, it's the water source for the South-North Water Transfer Project and the scenery is pretty dramatic with all those hills meeting the lake. The ferry ride across to the old submerged town site is worth the couple hours.

Good coverage of the core sights, though I'd push back gently on Day 3. The New City shopping zone is fine but it's the least interesting part of Wancheng, mostly chain stores you'd find anywhere. If your three days are flexible I'd trade that morning for the riverside wet market near the Wan River bridge, it runs from about 5:30 to 9:00 AM and you'll see the actual city waking up, plus the best jianbing in town for 6 yuan.
One practical thing the guide skips: the metro stops running at 10:30 PM, so if you're at Dongmen Night Market past then you're on taxis. Didi works fine but drivers sometimes cancel near the market because the street gets jammed, easier to walk two blocks north to Dongmen Street proper and flag one there.
Also worth noting the Confucian Temple ginkgo is genuinely spectacular in late November, the whole courtyard turns gold, but it's packed on weekends. Go right at opening if you're there in autumn.
one thing nobody mentioned yet, the day 2 garden teahouse closes way earlier than the garden itself, last pot gets poured around 4:30 even though gates shut at 5:30. found that out the hard way and ended up with cold tea.
also if you're doing the West Lake loop, the east side has a bunch of old men doing calligraphy with water brushes on the pavement early mornings, worth the detour before the tour groups show up around 9.
for Dongmen, skip the squid and go for teh grilled corn with chili salt, 5 yuan and honestly better. the squid stalls all source from the same place.
Solid write-up overall, and your neighborhood grouping is spot on. One thing I'd flag on Day 2: the opera only runs Friday and Saturday, so if your three days don't land on those, the backup is the small puppet theater near Dongmen, shows most nights at 7:30 for 40 yuan, no reservation needed. Also on Day 1, Lao Zhang closes at 2 but the beef noodles often sell out by 1, so don't push lunch too late. I'd swap the pedal boat for the walk if it's August, the lake gets crowded and the loop trail past Moon Bridge is quieter in the early morning anyway.
