the hotpot section is missing the real local move tbh. skip haidilao and go to the small hotpot places on Wenhua Road near the bakery, they do a lamb and pickled cabbage broth that's way more Dezhou than the chain stuff. about 60 RMB for two people and they give you free pickled garlic. also the egg tarts at Sweet Honey are fine but the red bean cakes are the sleeper hit, get them fresh around 10 AM when they come out of the oven
honestly the guide nails the basics but misses the best part of Dezhou eating which is the afternoon tea culture. around 3 PM every tea house on Heping Road serves these little savory pastries called huoshao with braised chicken filling, it's like a flaky pocket of heaven. my favorite is the one at 23 Heping, old building with the green tiles, they do a version with black fungus mixed in that adds this crunch. 3 RMB each and they sell out by 4:30 so get there early
also the dumpling spot mentioned is good but if you want the real deal go to the Muslim quarter on 12 Xinhu Street, there's a place that only does lamb and carrot dumplings from 11 to 2, no sign just a blue awning. 20 for a plate of 20 and the dough has this springy texture from being hand-kneaded, they use a heavier hand with the white pepper than most places. cash only though, they don't take WeChat
Seconding the Old Chen's recommendation, that place is a gem. One thing the guide doesn't mention is that Dezhou braised chicken is also incredible cold, a lot of locals buy it in the morning and eat it at room temperature for lunch, the jelly sets up even firmer. For the noodle stalls, Zhang's is solid but I actually prefer the place three doors down at 51 Linyi, their broth has a deeper star anise flavor and they add a spoonful of chili oil that's house made. The night market is great but if you want the real street food scene, head to the small lane behind the train station around 9 PM, it's where the taxi drivers eat and you'll find better grilled fish and whole garlic cloves for 2 RMB a skewer.

honestly the itinerary is pretty solid but you're missing one thing - the morning market near the old canal bridge on tianqu road. it's like 7am to 10am and u can get fresh jianbing for like 5 yuan plus the best soy milk i've ever had from this old lady who's been there since the 90s. way better than any tourist trap breakfast spot
for day 3 the ecological park is great but if you're there on a weekend theres a little tea house tucked behind the main pavilion, not marked on maps. they serve local jujube tea with these amazing date pastries for like 15 yuan, perfect after walking the wetlands. the owner is super chatty and will tell u stories about the canal history if you ask
one thing nobody mentions - the bus system is fine but the 101 gets packed during rush hour around 5pm. if you're heading back from the hot springs area try to leave before 4 or just grab a taxi, it's only like 20 yuan extra and way less crowded

the ecological park on day 3 is underrated, most tourists skip it. bring some bread for the birds near the wetland boardwalk, they'll eat right out of your hand. the canal boat rental is worth it but negotiate the price, they'll try to charge 60 yuan if you look like a tourist
solid itinerary, only thing i'd add is the confucian temple on the west side of xinhua park, most people walk right past it. it's a small courtyard with these old stone tablets that have calligraphy from the ming dynasty, no entrance fee and usually empty. takes like 20 minutes to look around but the contrast with the busy park is nice
for day 2 if you're not into soaking for hours the hot springs has this cold plunge pool that's actually really invigorating, i always do a quick dip between the hot pools. wakes you up way more than coffee
day 3 the canal walk is nicer in the late afternoon when the light hits the water, around 4pm. the historical plaques are in chinese and english but the english translations are kind of rough, still gets the point across. if you want a good photo spot there's a small bridge about 100 meters south of the rental dock that gives you the best view of the old willow trees
