I'd skip the dumplings and go straight for the hong shao rou (红烧肉), the braised pork belly. It's the kind of dish that takes hours to get right and theirs is fall-apart tender with that dark, sticky glaze. The menu has it listed near the top left, just point at the characters that look like a little pig and soy sauce. It's rich and savory, not spicy at all, and your buddy will think you ordered like a local.
Don't sleep on the braised eggplant (红烧茄子) even though it sounds simple. It's one of those dishes where the texture and flavor punch way above what you'd expect from a vegetable. Just get there by 6am to catch the soft light and the morning activities.
The Summer Palace at sunset is hard to beat, especially from the long corridor looking west across Kunming Lake. You get the reflection of the pagoda on the water and the hills turning orange behind it. If you want something more gritty, the hutong rooftops around Nanluoguxiang offer a different perspective, just find a bar or a hostel with a roof terrace around dusk.
