Honestly that guide nails it, especially the saka-saka at Chez Maman Josephine. I'd add that if you go there around noon, you might catch the fresh batch straight from the pot, it's way better than when it's been sitting. Also, if you're near the Grand MarchΓ© and want something quick, there's a lady on the corner of Rue de la LibΓ©ration who sells grilled plantains with a spicy peanut dip for like 300 CFA, it's a hidden gem the guide missed. The brochettes on Rue de l'Independance are solid but I prefer the ones from the guy near the petrol station on Avenue de l'UNESCO, they're a bit charred and more flavorful.

the guide's spot on about La Mandarine, their hummus is legit the best in the city. but if you want a real hidden gem, there's a small Senegalese place called Chez Fatou on Rue de la Paix, just past the mosque. they do a thieboudienne that's incredible, rice with fish and veggies, costs about 3,500 CFA and it's easily enough for two. i stumbled on it last year and go back every time i'm in town.

also for the beignets near the cathedral, the lady in the blue wrapper has the freshest ones, she's there from 4pm onwards. the other vendors are fine but hers are always still warm. worth the extra 50 CFA to find her.

One thing I'd add is that if you're after a proper Central African meal, go to Le Safari on a Saturday night for the live music, it gets packed but the mabokΓ© (smoked fish in leaves) is unreal, around 6,000 CFA and they serve it with plantains and a spicy sauce that'll wake you up. Also, the Grand MarchΓ© mangoes are fine but the ones from the roadside sellers near the university around 5 PM are sweeter and cheaper, like 500 CFA for a bigger bag.

The river itself is worth a day trip. You can hire a pirogue at the port in the 3rd arrondissement, right near the marchΓ© de Ouango, for about 15,000 CFA for a few hours. The guys who paddle are usually happy to take you up to the rapids at Zongo on the DRC side, you don't need a passport to just float past. Pack lunch because there's nothing to buy out there, and bring a hat, the sun off the water is brutal by 11am.

ngl the best quick escape is Kaga-Bandoro road heading north, not many tourists go that way. about 2 hours up you hit the village of Damara, there's a small market with fresh honey and grilled fish from the Oubangui, way cheaper than in town. the landscape changes fast too, more savanna than forest once you clear the outskirts. if you have a 4x4 you can push another hour to the abandoned diamond mines near Bria but the road is trash, honestly not worth it unless you're really into mining history.

Head south toward M'BaΓ―ki, it's about an hour and a half on the RN6. The market there on Saturday mornings is lively and you'll see stuff from the Lobaye region you won't find in Bangui. Stop at the Catholic mission in the center for a quiet spot and a look at the old colonial architecture. If you're up for a longer drive, the village of Boda is another hour past M'BaΓ―ki and has a nice waterfall called Chutes de la Lobaye, though the road gets rougher past the paved section.
