**🍽️ Samarkand's Essential Dishes** Samarkand's cuisine is rooted in Central Asian traditions, with a few signature dishes you shouldn't miss. Start with plov, the iconic rice dish cooked with lamb, carrots, and chickpeas, often prepared in large kazans. Another must-try is samsa, flaky pastries filled with meat and onions, baked in a tandoor. For a taste of local hospitality, try shurpa, a hearty lamb soup, and lagman, hand-pulled noodles with a savory broth. **🥘 Top Restaurants for Plov** For the best plov in Samarkand, head to Plov Center near the Registan at Tashkent Street 1. It's open from 11 AM to 3 PM, and a generous portion costs around 25,000 to 35,000 UZS. Another favorite is Karimbek, located at Gagarin Street 194, where plov is served with fresh salads and tea for about 40,000 UZS. Arrive early, as the best plov often sells out by 2 PM. **🥟 Street Food and Snacks** Samarkand's street food scene is vibrant and affordable. Look for samsa stalls around Siab Bazaar, where freshly baked samsa costs 5,000 to 8,000 UZS each. Don't miss the chance to try non, the round flatbread, sold at bakeries for 3,000 UZS. For a quick bite, grab a shawarma from one of the carts near Registan Street for about 15,000 UZS. **🍵 Teahouses and Sweets** Teahouses, known as chaikhanas, are perfect for relaxing with a pot of green tea and local sweets. Visit Chaikhana Besh Chinor at Registan Street 5, where you can enjoy tea with honey and nuts for around 20,000 UZS. For dessert, try halva and navat, crystallized sugar, available at Siab Bazaar. The teahouse is open daily from 8 AM to 10 PM. **🍢 Kebab and Grill Spots** For meat lovers, Samarkand offers excellent kebabs and grilled dishes. Head to Old City Restaurant at University Boulevard 12, where a skewer of lamb kebab costs about 20,000 UZS. The restaurant is open from noon to 11 PM and also serves grilled vegetables and fresh salads. Another option is Registan Restaurant, near the Registan ensemble, with kebabs starting at 25,000 UZS. **🍜 Local Eateries for Lagman** Lagman, a noodle soup with meat and vegetables, is a comfort food staple. Try it at National House of Samarkand at Tashkent Street 45, where a bowl costs around 30,000 UZS. The eatery is open from 10 AM to 9 PM and also offers other Uzbek classics like manti and dimlama. For a more casual setting, visit Lagman House at Amir Temur Street 18, with prices from 25,000 UZS. **💰 Budget and Mid-Range Options** Samarkand is very affordable for food, with many meals under 50,000 UZS. A typical lunch at a local chaikhana costs 30,000 to 50,000 UZS, while street snacks are 5,000 to 15,000 UZS. For a splurge, restaurants like Platan at Pushkin Street 10 offer European-Uzbek fusion dishes for 80,000 to 120,000 UZS. Most places accept cash, so carry small bills. **🕒 Food Timing and Etiquette** Meal times in Samarkand are fairly standard: lunch from noon to 2 PM and dinner from 7 PM to 9 PM. Many restaurants close early, especially outside the tourist center, so plan accordingly. When dining, it's customary to share dishes and pour tea for others. Tipping is not mandatory but rounding up the bill is appreciated.
