How do I securely pay for my supplemental property tax bill?

We finally got the supplemental in the mail and the first installment is due on 12/31. I go to open the online portal and it says "The online inquiry/payment option is not currently available because the Tax Collector is still processing 1st installment payments received. The Tax Collector expects to be complete with processing by Monday, December 30, 2024, at which time the online inquiry/payment option will be available again. At that time, delinquent 1st installment tax amounts will include a statutory 10% (percent) penalty."

Like, what? Why is the online system just not available? Excuse my millenial confusion about why they take the system offline if I have a full EFT number and PIN and feel like I should just be able to pay this with a bank transfer instead of incurring fees from using a credit card over the phone. They just say "fees" and NOWHERE does it say what %. The amount owed is high enough that a small percent is a real amount of money.

I never pay for anything with checks. The account I keep this $ in doesn't have a checkbook. I'm paranoid about sending a big check in the mail and that it will get lost / I'll get hit with penalties. This is making me feel childish but it just feels... risky? Can I send it certified mail? Can I just go down to the Treasury Office in downtown to drop it off myself? I tried calling the office phone and of course after being on hold 2x for 30+ minutes, the call just drops.

If anyone has any experience on the matter, please help.

Solid list. I'd add that the al pastor at Leo's is good but the mulitas are where it's at, a quesadilla-taco hybrid with melted cheese between two tortillas for about $4. You can get them at the same truck. For Korean BBQ, if Park's is too packed, walk over to Quarters BBQ on 9th Street, cheaper setups but still charcoal grills and the short rib marinade is just as good.
