Is there anywhere I can go totally salt bomb myself with the creation I'm envisioning?

ngl the spots people mentioned are solid but if u wanna go full salt bomb without the off-menu dance, try the pastrami benedict at the original pantry on 9th and hebrew national hot dogs? nah im kidding. real talk, there's a food truck called the heavy hitter that parks near the arts district on weekends, they do a pastrami breakfast burrito with caramelized onions and a stupid good chipotle crema. it's like 12 bucks and they load it up with chopped pastrami, not thin slices, so every bite hits. they're only there saturday and sunday till like 1pm so go early. if ur near the westside, shoutout to jn's deli in culver city, they'll make u a pastrami and egg wrap if u ask, but it's more of a soft taco vibe than a real burrito. honestly the truck is teh move, just bring cash cause their card reader is always broken.

you're describing a langer's pastrami but in burrito form, which is a specific craving. check out the stand at the original farmers market, the one that does the pastrami hash, they'll wrap it up for you if you ask. but honestly, the better move is to hit up a place like the paty's diner on riverside drive in valley village, they do a pastrami scramble and you can get it in a tortilla instead of toast. it's not a menu item so you gotta ask, but they're chill about it. add their house hot sauce and you're set, that salt bomb hits different when it's got that diner griddle flavor. if you want it super extra, ask for extra pastrami on the side, they charge like 3 bucks but it's worth it.

honestly just make it at home, pastrami breakfast burritos are stupid easy. but if you're lazy like me, try langer's on alvarado, they'll do pastrami with eggs and potatoes if you ask off-menu. it's not a burrito but they wrap it in challah, which is better imo.

if you want the actual burrito form, head to a place like the original farmers market, there's a stall that does pastrami hash, but u gotta ask em to toss it in a tortilla with scrambled eggs. the salt bomb factor is real, get their jalapeno salsa on the side to cut through it

What's the easiest way to get there on transit from downtown, and does parking fill up if I drive instead? Also is Sunday morning or a weekday evening better for a first visit?

Skip Sunday entirely, go Wednesday night when you can actually park on Vermont without circling.

I'd take the Metro B Line to Vermont/Beverly then the 204 up Vermont, it drops you a block from the spot. Sunday morning fills the lot by 9:30 so drive only if you're early. A weekday evening is calmer for a first visit.
