Early morning to early evening in London?

I (22f) am from Australia! I am travelling with my brother and have ended up with two nights (only one full day) in London before we head off to visit some family elsewhere. My brother isn't too much of a city man and I was excited for the chance to spend some time alone just perusing a different place.

I have been to london before and seen the majority of the major sights, so I was quite excited to not be doing a mad dash around the city, but I still thought it would be nice to wake up early and start wandering before the crowds emass. In typical small town girl fashion i'm very excited for some shopping but brandy melville and most vintage stores im interested in around covent garden won't open until 11ish!!

So, I ask you, what would be some good early morning activities, breakfast spots, bakeries, parks etc for me to fill my time with.

We have avocado toast, açai and eggs benedict A'PLENTY in Aus so i'm not too interested in modern (?) cafes, but what we don't have is "greasy spoons" (I think this is their name). I have heard of regency cafe and am seriosuly considering breakfast there but if anybody has some other recommendations I will listen closely !!

As for the rest of the day, the shopping is important but i'm very open to suggestions on anything else. I'm not bothered by walking and have been quick to figure out how the underground works so I could get most places. I plan to be out until late afternoon then head back to my hostel for dinner.

Any itineraries, pubs, restaurants, favourite shops, GOOD COFFEE (PLEASE), bookstores, cinemas, etc are all welcomed! please!

This is a solid guide, you've covered a lot of ground. I'd add that if you're in the Borough Market area on a weekday morning, grab a bacon butty from the stall under the railway arches on Stoney Street, it's about £5 and much better than queuing at the market's more famous spots. The Harwood Arms is a good shout for a roast, but you really need to book that one at least a month ahead, especially on a Sunday. For a more casual but still proper Sunday lunch, I've had great luck at The Marksman in Hackney, their dripping roast potatoes are something else.
