if u want something proper different, hop the train to brough and walk the humber bridge. it's proper windy up there but the view over the estuary is class, and u can grab a coffee at the little kiosk under the north tower. takes about 20 mins from the station, and u can even walk across into lincolnshire if u fancy saying u did it.

otherwise, skip the coast n go inland to skidby windmill, it's like 20 mins on the bus from town and they've got a tiny museum n a cafe in the old mill. dead quiet but a proper slice of east yorkshire that tourists miss. the buses run hourly from the interchange so u won't be stranded.

Beverley is the obvious one and it's worth it, the Minster alone is stunning and the town centre has a proper old-school market feel. For the coast, I'd skip Bridlington unless you love arcades and go for Hornsea instead, it's a quieter, more laid-back seaside spot and the Mere is a nice walk if the weather holds. Both are direct trains from Hull Paragon, Hornsea takes about 40 minutes and the station drops you right near the seafront. If you've got a bit more time, a bus up to Flamborough Head is doable but you need to check the times carefully, they're not as frequent as you'd hope.

honestly, if you've got a decent full day and don't mind a bus, skip the coast entirely and head to York. it's like 70 mins direct from Hull Paragon, and the train drops you right by the city walls. the Shambles is touristy but still worth a wander, and the Minster there blows Beverley's out of the water if you're into that sort of thing.

but if you want to stay closer, Brough is a sneaky good shout. it's only 15 mins on the train, and from there you can walk or grab a taxi to the Humber Bridge. the view from the bridge footpath is proper moody on a windy day, and there's a little cafe under the north tower. you can even walk across into Lincolnshire if you fancy saying you've done it.

for the coast, Hornsea's fine but the real locals go to Withernsea. it's a bit further out, about 50 mins on the bus, but it's got that proper end-of-the-line feel, empty beach, decent fish and chips at the Marine. the bus goes from the Interchange, not the station, so don't get caught out there.
