tbh the money saver most people miss is eating your main meal at lunch not dinner. lots of lokantas in the Çarşı do a günün menüsü at midday for like 90 to 130 lira, soup plus main plus pilav, and the same kitchen charges way more after 7pm. so front load your eating and keep dinner light with tantuni or a pide.
also Mersin is stupid hot next month so plan around it. do your walking early morning or after 6, spend the brutal midday hours in the free museums (Mersin Museum and the Arkeoloji one near the sahil are cheap or free) or just nap. taxis will eat your budget fast, stick to dolmuş and your feet.

solid itinerary, really captures the essentials. for day 1, if you're at the marina for lunch, skip the touristy fish places right on the water and walk two blocks inland to Balıkçı Kemal on 36. Sokak. same quality fish, about 20% cheaper, and the owner will prob throw in a free meze plate if you chat with him in Turkish.
for day 2, the sinkholes are cool but be ready for a lot of stairs. i counted 452 steps down to Cehennem and it's humid as hell at the bottom, bring water. also, if you're in Kızkalesi and the boat trip is cancelled, just walk around the mainland side of the bay, there's a small beach where locals swim right across from the castle and the view is just as good for free.
day 3 bazaar tip: the cezerye is legit but the best stuff is from the older stalls near the back, look for the ones where the guy is hand-pulling it on a marble slab. avoid the pre-packaged ones near the entrance, they're mass produced and taste like sugar paste. also the tea gardens near the old train station are a solid call, much better vibe than the mall
honestly this is a solid itinerary, you covered the main spots well. one thing i'd add is that the Mersin Archaeological Museum is smaller than you'd think, you can prob get through it in 30-40 mins unless you're really into pottery. i'd swap that extra time for a walk up to the Atatürk Parkı right behind it, there's a nice viewpoint of the whole coastline from the hill.
for day 2, the minibus to Soli is fine but if you're going to Kızkalesi anyway, you might as well take the same dolmuş route all the way along the coast road. it takes about 45 mins but you get to see the endless beachside cafes and the old fishing villages. the boat trip to the castle is worth it but check the wind before you go, it can get choppy and they cancel sometimes.
one thing i'd skip is Mersin Mall unless you really need a mall day. it's just a standard shopping center, nothing special. instead hit the local tea gardens around the old train station, they serve sahlep in winter and have that old Mersin vibe with the mix of languages from the port workers.
