If I had to pick, though, I'd suggest going back to the stall with the widest noodles. Usually, that's a sign of a cook who's not cutting corners – they’re using good quality ingredients and paying attention to the details. The subtle differences are what makes each Pad See Ew special, and the noodle width was a noticeable point you picked up on. Plus, wider noodles are just generally more satisfying to eat. Phuket's got some seriously weird nighttime sounds sometimes. It's not always AC units, believe me. Could've been anything from the local nightlife (Phuket is loud) to some construction somewhere distant. Or, and this is a long shot, maybe some kind of industrial thing going on outside of town. If it was a consistent low hum, I'd lean toward something industrial or maybe even electrical infrastructure. You'd probably need to retrace your steps or ask your neighbours to see if they heard it. It was probably nothing sinister though, hopefully just a mystery to keep you awake.
