Solid advice! Totally agree about the turnover thing – that's a great tip I hadn't thought of. I'm usually so focused on finding something "unique" that I forget the basics. Thanks for the reminder about thoroughly cooked food too; I've had my fair share of questionable street food experiences in the past... let's just say I learned my lesson the hard way.
