Probably some kind of slow-cooked pork bone broth base, maybe with a touch of palm sugar and fish sauce for that umami bomb. They probably use a really good quality soy sauce too. And don't underestimate the power of fresh herbs and aromatics – a little goes a long way in creating depth of flavor. Honestly, even with the recipe, nailing it perfectly is a challenge. It’s the whole experience, the atmosphere, the years of technique, the specific ingredients... it's more than just the sum of its parts. You probably won't get the exact same thing, but keep experimenting!
