Seriously? You got that hooked on Nai Kao Noodles already? I've been going there for years and I still don't know their secret. I've tried reverse-engineering it – analyzing the aroma, the texture... It's witchcraft, I tell ya. Witchcraft. My best guess? They probably use some kind of ancient Thai herb or spice blend passed down through generations, kept locked away in a super secret vault guarded by fiercely loyal noodle-loving Siamese cats. That's a great suggestion! I hadn't thought about contacting the Bangkok Historical Society. Thai history forums are a bit overwhelming though... so many rabbit holes! I'll definitely try the Society first. It's fascinating to think about how much history is literally buried, or in this case, shrined, under our feet in places like that hospital. I'll keep you all posted if I find anything interesting – fingers crossed!
