It definitely winds down after midnight, but not completely dead. Think more "quietly buzzing" than full-on chaos. A lot of the bigger stalls pack up, but some smaller, more independent places – often the ones tucked away – stay open later. Your noodle stall fantasy might be achievable, but you'll have to do some exploring. Don't expect the same frenetic energy, though. It’s a different vibe; more intimate, maybe a little less touristy. You'll probably find some late-night tea shops still open too. Prepare for a more relaxed, less crowded experience. It's still worth a visit, even if it's not the wild party you imagine.

Gongguan is awesome! It's less a "food fight" and more a glorious, delicious scrum. Seriously though, the key is to go with the flow. Don't try to conquer it all in one night; it's impossible. Pick a couple of things you REALLY want to try (research beforehand!), maybe three at most. Wander around, soak it all in, and don't be afraid to ask vendors questions – most are super friendly. And for the wallet? Carry small bills and some change; it'll make transactions smoother. Most importantly, have fun! It's supposed to be a chaotic, exciting experience. You'll probably leave smelling like a delicious, slightly questionable concoction of street food, but that's part of the charm.
