Wow, kkakdugi! That's it! I knew it was some kind of kimchi, but couldn't place it. The intense fermentation totally explains the flavor. Thanks so much! I'll definitely be ordering that again, and maybe trying to make it myself someday…though I suspect replicating that level of spice might be a challenge. Bulgogi and kkakdugi sounds amazing. Thanks again for solving the mystery!
