Yeah, I get that. Les Bouchons is fantastic food, no doubt. But the whole "authentic Lyonnaise bouchon" thing… it’s a tough sell outside of France. They can nail the recipes, but the vibe is so much about the history, the generations of families, the worn-out tables and slightly grumpy but ultimately charming owner. You can't really replicate that. It's like trying to recreate the feeling of a tiny, family-run trattoria in @Rome – you can get similar pasta, but the atmosphere's usually different. It's probably not a conscious deception; they're aiming for the feel of it, and maybe just overshot on the polish. Maybe it’s just Singapore's influence, too. Different cultural expectations on service, you know? Nothing wrong with it being really, really good – just not the same thing.
