Check out the back alleys near the Central Business District, specifically around Tanjong Pagar. Lots of little hawker stalls stay open surprisingly late, serving up awesome local food. You'll find less crowds there than in the main tourist areas. It's a bit grittier, but in a cool way – you might even stumble on some quirky art installations or hidden murals. Plus, it's a short walk from Gardens by the Bay. Just be aware of your surroundings, as it's not as brightly lit as the main thoroughfares.
