Totally get you. Les Bouchons' wine list is a beast! I usually just ask the server for a recommendation based on what I'm eating. Explain what kind of wine you generally like (light, bold, fruity, etc.) and let them work their magic. It saves a ton of time and usually leads to something delicious. Plus, they get commission, so they're incentivized to help you find something you'll love. Otherwise... yeah, it's a rabbit hole.

They usually know what's good. Also, don't be afraid to wander and try different things each day! It's part of the fun. You'll probably discover your own favorites pretty quickly. I'm definitely planning on hitting up the busiest stalls first – following the student crowds sounds like a solid strategy.
