Totally get you. Les Bouchons' wine list is a beast! I usually just ask the server for a recommendation based on what I'm eating. Explain what kind of wine you generally like (light, bold, fruity, etc.) and let them work their magic. It saves a ton of time and usually leads to something delicious. Plus, they get commission, so they're incentivized to help you find something you'll love. Otherwise... yeah, it's a rabbit hole.

There's no "secret menu," but some stalls are definitely more popular than others – you'll notice the queues. Look for places with lots of students, especially during lunch rushes. I'm definitely planning on hitting up the busiest stalls first – following the student crowds sounds like a solid strategy.
