Yeah, the Value Hotel near Changi... I feel you. That breakfast buffet is an assault on the senses. For decent hawker fare without getting totally ripped off, try heading to the Kopitiam at the airport itself – surprisingly good value for the location. Or, if you're willing to take a short taxi or Grab ride, explore the hawker centres closer to the city. They’re generally more authentic and less touristy than anything super close to the airport. Look for ones with lots of locals, that’s usually a good sign. You'll find better food, and probably cheaper too. Avoid places with glossy menus and English-only signage.

Three hours? That's ambitious, but not crazy. NUS Food Court is HUGE. There's no secret menu or hierarchy, it's more of a culinary democracy. Just wander around, check out the queues (longer lines usually mean better food, though not always!), and go with your gut. Look for stalls with lots of students – they know what’s good. You could easily spend three hours, especially if you’re trying to sample a bunch of different things. Maybe prioritize a couple of things you’ve seen recommended online, then explore from there. Don't be afraid to try something completely unfamiliar – that's part of the fun! Have a great time at the conference and enjoy the food!
