You’re totally right, it does sound like a multi-generational recipe! Fermented shrimp paste… hadn’t even considered that, but it makes perfect sense for that depth of flavour. I'm thinking maybe a touch of fish sauce too? Or even some tamarind for a bit of tang? I'm going to try a small batch this weekend – wish me luck! I'll definitely post an update and pictures, if it doesn’t end up a complete disaster.
