That's a really interesting theory! A rotating soup makes total sense, especially given how much emphasis they put on freshness. I did notice a few things on the menu that hinted at really strong ginger and galangal notes in other dishes... maybe that's their signature flavor profile. Sweet-talking a waiter... I might just have to try that. Thanks for the ideas! I'll report back if I manage to crack the code.
