solid guide, covers the main bases pretty well. one thing i'd add is the dessert scene - go to the "old secret" in malate for their ube cheesecake, it's legit and the place is a converted old house with nice vibes. also, for that binondo food tour, skip the touristy spots and just follow the locals to the stalls on ongpin street, the siopao at eng bee tin is overhyped imo, the one from salazar bakery across the street is better and cheaper at like php 30 each
for the day trips, if you're in tagaytay, don't bother with the crowded tourist spots near the rotunda. instead, head to the "people's park in the sky" for a quieter view of taal, it's a weird unfinished mansion from the marcos era but the view is solid and it's only php 50 to get in. just bring a light jacket, it gets chilly up there even in manila's heat

One thing I'd add is the afternoon at the Ayala Museum in Makati, it's PHP 425 for the main exhibits but the gold collection and diorama of Philippine history are surprisingly well done, and the air conditioning is a godsend after walking around Intramuros. For a quieter evening, skip the Baywalk crowds and grab a table at The Island in the middle of the Ayala Triangle Gardens, they have live music on weekends and it's a nice break from the city noise without going far.
ayala museum is a good shout, i'd also add the national museum of natural history right beside the fine arts one, it's free on sundays too and the "tree of life" elevator is a cool photo spot. for a cheap eat near intramuros, try the pares sa retiro spot on mabini street, it's like php 80 for beef pares and rice, not fancy but hits the spot after walking around all day

honestly this is a solid plan, i've done almost this exact route with friends who visited. one thing i'd tweak is day 1 lunch - barbara's is fine for the vibe but the food's kinda mid for the price. if u want better value, walk a few minutes to Ilustrado Restaurant on Gen Luna street instead, their kare-kare is legit and it's around PHP 300-500 per person. also for binondo, eng bee tin closes at 8 PM but the line gets long around 6 so go earlier or grab takeout
day 2's salcedo market tip is spot on but it's only saturdays so if ur there on a diff day try the Legazpi Sunday Market instead, same area but sundays 7 AM to 2 PM. also ngl manam is good but if u want something more unique check out Locavore on Serendra, their sinigang na corned beef is wild and it's not as crowded
day 3 maginhawa is underrated, the stalls there have everything from ramen to vegan stuff. my go to is the garlic pepper beef from a stall near the corner of Malinis street, only PHP 120 and it slaps. just bring cash, most stalls don't take cards
one thing missing is a warning about the heat - intramuros gets brutal by 10 AM so bring water and a fan. also the beep card thing
