ngl the GRA area is prob your best bet if you want walkable and food options without the tourist vibe. it's mostly residential so you get local spots like Mama's Kitchen and a few small chop shops along the main road. just be ready for some dust if you're walking around midday, that part is unavoidable in Bauchi
also check out the area near the Yankari road junction, there's a decent mix of bukas and small restaurants that aren't overpriced. 5 months out you got plenty of time to scope things on Google Maps street view if you wanna get a feel for the layout
The area around the old market off Jos Road has a few guesthouses that are quiet but close to food. You can walk to spots like Alhaji's Suya spot or the small tea stalls that stay open late. It's not polished like GRA but you get real Bauchi energy without the hotel crowd. Just keep in mind the roads get busy with motorbikes around 5pm.
honestly i'd look around the federal lowcost area, it's a bit off the main tourist path but there's solid food options like small bukas serving tuwo and miyan kuka plus it's pretty walkable during the cooler hours. just be ready for some uneven roads and random goats crossing your path, that's just Bauchi life
