oh man the guide's great but they forgot the most leon thing ever, the parque zoologico is actually pretty solid if you're with kids or just wanna kill a few hours. it's like 50 pesos entry and they have this walk through aviary where birds just fly around you, kinda surreal. also for a quick cheap meal hit the tortas de la barda on blvd. mariano escobedo, it's a cart that sets up around noon and does these massive tortas with milanesa for like 45 pesos, cash only and bring napkins
adding to what others said, if you're a food person don't skip the barbacoa at mercado aldama on weekends, it's this huge market near the cathedral and the barbacoa stands are tucked in the back. get there before 11am or they sell out, a plate with consome is like 90 pesos and it's leagues better than any restaurant version. also the parque metropolitano is great for biking but the rental bikes are those heavy cruisers, if you're serious bring your own or just walk the trails instead, the lake loop is a solid 5k
honestly the guide nailed the main spots but i think the mercado de la colonia obregon is worth a mention, it's a few blocks off the main plaza and way less touristy than the leather district. grab a torta de pierna from loncheria la chica for like 40 pesos, it's this tiny stall in the back that's been there forever. also if you're into shoes, the shoe museum (museo del calzado) on calle madero is tiny but has some wild vintage designs from the 1800s, entry is free and it takes maybe 20 minutes to go through

yeah this is a really solid plan, you've clearly put time into it. one thing i'd tweak on Day 1 is the Museo de las Momias, honestly it's kinda small and the line can be 30+ minutes by noon. if you're not dead set on it, skip it and walk over to the Mercado de la Luz instead, it's about 10 minutes east on Calle 5 de Mayo. the dried chiles and leather stalls there are more interesting to me, and you can grab a torta ahogada for like 50 MXN at Loncheria La Luz, it's the stall right inside the main entrance.
for Day 3, the Calzado Andrea tour is good but there's a smaller workshop called Zapateria Hernandez on Calle 16 de Septiembre that does walk-in demos and they'll let you watch them stitch a shoe from scratch. no set schedule, just show up around 11 AM and ask for Don Carlos, he's been doing it 40 years. the belts there start at 250 MXN but the quality is night and day vs the stuff on the main strip.
also for your last night, Sky Bar is fine but the rooftop at Hotel Hacienda del Bosque on Av. Madero 400 has a better view of the cathedral and quieter vibes. cocktails are around the same price but you can actually hear yourself think. just check if they've got a private
I've done this exact route a few times and it holds up well. One thing I'd change is skipping the Parque Metropolitano on Day 1 if you're tight on time, it's nice but it's a big open space with not much shade, and the R-1 bus can be crowded around 5 PM. Instead, walk over to the Barrio de San Miguel after the museum, it's only about 15 minutes on foot from the Museo de las Momias, and you can grab a coffee at Cafe Mi Tierra on Calle Hidalgo while you're there.
For Day 2, the Leon Zoo is fine but the real gem is the Jardin de los Niños playground right across the street. It's free and has these huge concrete slides built into the hillside, locals bring their kids there for hours. If you're not with children, skip the zoo and go straight to the Museo de la Ciudad earlier, it's small but the photography exhibits on old Leon are worth a slow look.
Your Day 3 factory tour idea is smart but the metro bus route M-1 stops running frequently after 6 PM, so plan your return before that. There's a great leather workshop called Talabarteria El Charro on Calle 20 de Enero that does walk-in demos for free and sells belts for around 200 MXN, way better quality than the tourist shops in the center.
This is a solid itinerary, you've clearly spent some time in Leon. One thing I'd add for Day 1 is to check if the Leon Cathedral has the light show on the facade that night. It runs at 8 and 9 PM some weekends and it's genuinely impressive, completely different from the daytime visit.
For Day 2, instead of the food court at Plaza Mayor, walk five minutes to the little taqueria strip on Calle Pino Suarez just behind it. Tacos de suadero at El Güero are about 18 MXN each and way better than anything in the mall. You'll see factory workers eating there, which is always a good sign.
On Day 3, the Mercado Expiatorio is best around 10 AM when the tortilleras are still hand-pressing gorditas fresh. The ones at the corner stall nearest the 5 de Mayo entrance are my go-to. Also, the Calzado Andrea tour is worth it but call ahead, they sometimes close for lunch from 2 to 3 PM and you don't want to get stuck waiting.
