Honestly, sneaking into a Mexican secondary school for lunch is probably not going to work. Security is tighter than a drum. Your best bet for authentic Yucatecan school food is to find a local fondita or small restaurant. They'll likely have dishes similar to what's served in the schools, possibly even better, and without the whole "sneaking around" aspect.
