skip the touristy fish market and head to the camel market on the outskirts near the airport, it's wild and real and you'll see actual trade happening. for food, find a little place called Restaurant Sahara in the Tevragh Zeina area, they do a solid thieboudienne that's way better than the big spots. if you want quiet, the botanical garden at the University of Nouakchott is usually empty and nice for an afternoon wander, just go during the week
if u want something totally off the radar, check out the small art gallery at Centre Culturel Marocaine near the city center, they host local painters and sometimes have free tea sessions. also the beach just south of the port, past all the fishing boats, is super quiet and great for a walk
honestly the best thing I did was just wander around the Marche Capitale area in the morning before it gets hot, there's this tiny alleyway off the main square with a bunch of women selling homemade bissap juice and fried bean cakes for like 50 ouguiya, no signs or anything. and for a quiet spot, the old port area near the fishing beach at sunset is pretty chill, nobody goes there except a few local guys playing cards

The guide's right about Le Jardin being a good starting point, but I'd actually steer you toward their lunch menu instead of dinner. They do a fixed three-course for 3,500 MRU that changes daily, and it's usually better value than ordering a la carte. The couscous on Thursdays is the standout.
One thing missing here is the Lebanese influence on Nouakchott's food scene. There's a proper hole-in-the-wall called Le Cedre on Rue de l'Ambassade du Maroc where the hummus and grilled chicken are as good as anything I've had in Beirut. A full mezze spread for two runs about 2,500 MRU, and they stay open until midnight most nights which is rare around here.
nice list, i'd add that la palmeraie mentioned in the tevragh-zeina district does this insane grilled camel steak that's super tender, not many tourists try it cause they think it'll be tough but they marinate it in spices for hours. runs about 2,000 MRU and comes with this smoky tomato sauce on the side, really unique to mauritania. also if you're into sweets, there's a little spot called patisserie al waha near the cathedral that does these date-filled cookies called mbakba that are perfect with tea
yeah this is a solid list, i'd add that the grilled fish at port de peche is best right when they open around 11am before the crowds hit and the fish is still really fresh off the boats. also if you're near tevragh-zeina, check out restaurant el boustane for a proper mafe (peanut stew) that's not on most tourist radars, runs about 800 MRU and they're super consistent. one thing the guide doesn't mention is that many of the street food stalls near marche capitale actually start selling fatayas around 6am for breakfast, which is a great cheap start to the day before it gets hot
