tbh you're right it's not like SF where there's one on every corner but there are spots. i'd check out Juice House in jiyugaoka, they do cold-pressed stuff and use organic produce when they can get it. also there's a tiny place called Farm to You near omotesando that's more of a smoothie bowl spot but they have fresh juices too, prob the closest you'll get to that west coast vibe. prices are a bit steep though like 700-900 yen for a small bottle

There's a place called Fruit & Juice in ekoda that not many people know about. It's run by a guy who used to work at a fancy hotel bar and he makes these incredible juice blends with organic fruit he gets from a farm in yamanashi. His yuzu-ginger blend is something else, around 600 yen, and he'll actually chat with you about where everything comes from if it's not busy. The shop is tiny, just a counter and a few stools, but that's part of the charm.

yeah juicing is def not as big here but there's a few hidden gems. if you're near shibuya, The Bowery in udaigawa area does solid cold-pressed juices and they actually list where their produce comes from on the wall. they also have a loyalty card which helps with the price tag (around 800 yen for a bottle)

another spot that's easy to miss is Green Table in aoyama, it's tucked behind the main street near the okura hotel. they do a seasonal juice menu that changes every month based on what's local, and they're pretty strict about organic. the owner used to run a farm in chiba so she knows her stuff. just don't go during lunch rush cause it gets packed with office workers

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
