I prefer to purchase fabric in person rather than online because I want more variety and the ability to choose specific lengths. Can anyone recommend shops where I can select both the fabric type and the exact length I need?

if ur in west tokyo, shimokitazawa has a few small fabric & craft shops around the shotengai that sell by the meter, good for indie prints & vintage deadstock. also check the basement of okadaya in shinjuku (separate from the main floors) for remnants sold cheap by weight, not length, which is handy for small projects. tokyu hands cuts by the meter too but the markup is real so id only go there if ur already in the building

honestly the chain stores get slept on for this. Yuzawaya has big locations in Kichijoji and Kamata and they cut by the meter, plus the staff don't rush you if you're measuring stuff out. decent for basics like cotton sheeting or interfacing when you don't wanna trek all the way to Nippori

also fwiw some of teh wholesale places around Kuramae sell to walk-ins now, you just buy a few meters minimum. cheaper than retail if you're doing a bigger project

Nippori Fabric Town near Nippori Station is your best bet. The main stretch along Nippori Chuo-dori has dozens of shops, and almost all of them sell by the meter, so you just tell the staff how much you want and they cut it. Tomato is the big one with several buildings, but for plain cottons and linens I actually prefer Maruzen or the smaller shops further down the street since the prices are lower and it's less crowded on weekdays.

If you're after something specific like wool or suit fabric, Okadaya in Shinjuku is also solid, they cut to length and have staff who can help if you're not sure what you need. Just note many smaller Nippori shops close on Wednesdays, so plan around that.

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
