Toyama's Best Kept Secret?

Absolutely stunning countryside, and the people were incredibly friendly. I spent most of my time hiking in the mountains, the views were unreal... but I never found a decent ramen place! Everywhere I went, the noodles were... okay. Nothing special. Seriously, I'm a ramen fiend. Anyone know where the locals go for killer ramen in Toyama? I feel like I missed out on something amazing.

Dude, Toyama and amazing ramen? That's... a paradox I haven't encountered before. Seriously though, you must've been incredibly unlucky. Toyama's got some seriously good ramen spots, it's just a matter of knowing where to look. Forget the tourist traps; ask around at smaller, family-run eateries. Check out the backstreets near the train station, that's usually where you find the authentic stuff. Or even better, wander around the local markets; often the best places are completely unassuming. You'll probably find some amazing little places with the most killer broth you've ever tasted, hiding in plain sight. Next time, ditch the hiking boots (just kidding... mostly) and spend an afternoon just exploring the less-traveled paths. You'll be rewarded, I promise.

honestly I think you gotta hit up the places near the market in Toyama city, like the small shops that look kinda rundown but have a line of old dudes outside. the shio ramen at Menya Shichisai is pretty solid, nothing mindblowing but way better than the touristy spots

Oh for crying out loud. Toyama has ramen. It's not some hidden mythical beast. You were probably too busy staring at mountains to look in the right spot. Go to Ikedaya near the station, it's nothing fancy and the line's annoying but the shio broth is legit

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
