Sunday night is actually a solid time for Shibuya if you hit the right spots. A lot of local bars near the Love Hotel Hill area stay open late and have a more chill, conversational crowd compared to the weekend chaos. For something different, try The Open Book in Dogenzaka, it's a tiny whisky bar that's usually half full on Sundays and the owner doesn't mind chatting if you're up for it. Kabukicho on a Sunday feels more like a weekday, you'll get some stragglers but most of the touts and energy are gone by 11 PM.

Nonjima is a solid bet if you're in Shibuya and want something different from the usual bar crawl. It's a tiny standing sake bar tucked away near the Tokyu Department Store, and Sunday nights there are pleasantly low-key with a regular crowd that actually talks to each other. The owner is a sake nerd who will walk you through what's open based on what you like, and most glasses are around 600 yen. Golden Gai is fine for bar hopping but on a Sunday you'll get better conversation at a place like this where people aren't rushing between spots.

you could try going to koenji instead, it's a quick chuo line ride from shinjuku and has a totally different energy on sundays. the bars around the north exit are open and it's mostly locals grabbing drinks after their weekend errands, not tourists trying to party. check out el sol for live jazz that bleeds into the street, they usually have sets running until midnight and you can grab a seat at the counter without fighting anyone.

Where can I find crispy, pan-fried bacon similar to a certain international style?

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
