Hey,

As the title says, I am looking to buy goose meat, or specifically goose breast. I have a traditional dish from my home country that I would like to make for my partners family, but I do not know where I can buy it. I would also prefer if I don't have to travel for hours, so recommendations around Shinjuku or Shibuya would be amazing. Worst case, I can replace it with duck meat. But I also don't know where to get it either.

yeah duck is the safer bet tbh. niku no hanamasa is solid for duck but if u want fresh meat try national azabu in hiroo, they carry game meats sometimes. it's a bit of a trip from shinjuku but the hiroo station area is nice to walk around anyway. for goose specifically i've only ever seen it at the tokyu food show in shibuya scramble square, and even then it's seasonal maybe around christmas

ngl goose is pretty rare here even in the big supermarkets. if you're set on it though, check Meidi-ya in shinjuku south terrace, they import a lot of european stuff and sometimes have frozen goose around the holidays. otherwise for duck, the meat counter at Kinokuniya in shinjuku takashimaya usually has fresh duck breast in the fridge section, it's not cheap but it's good quality. worst case you could try ordering online from a place like the meat guy but that takes a few days

if you're willing to swap to duck, there's a small butcher shop called matsusei in shimo-kitazawa that's great for poultry. it's like a 15 min train from shinjuku on the odakyu line. they have fresh duck breast most days and the quality is better than the frozen stuff at niku no hanamasa. for goose you'd probably have to go to nihonbashi and check the depachika at mitsukoshi, but i wouldn't bet on it being in stock

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
