I found some tours in okutama or downtown Tokyo but I would much rather just go at my own pace. Preferably near the water because I don't have access to a car.

fwiw there's a spot on the Edogawa river near Kasai station that does solo kayak rentals, no guide. it's just a little booth right by the water, like a 10 min walk from the station. they have sit-on-tops for 2,500 yen for 3 hours and you can go up toward the Tokyo Bay area or just hang around the riverbanks. the current's pretty gentle and there's a bunch of little islands and reeds to explore, plus you can see the skyline from the water which is kinda cool. just bring a towel cause you'll prob get a bit splashed

theres a spot near kasai rinkai park that does independent rentals, its called tokyo waterfront kayak center or something like that. you take the train to kasai station then its like a 10 min walk through the park to the water. they have single and double kayaks, no guide needed just sign a waiver and pay upfront. theres a huge bird sanctuary right there so you can paddle through the marshes and see herons and stuff, way more nature than the sumida river. just be aware they close at like 4pm in winter so go early

if you're near the water and want something different, try the Inokashira Park in Kichijoji. there's a small rental spot on the lake with rowboats and a few kayaks, no guide needed. it's not a river so it's more of a chill paddle in a circle, but the vibe is nice with the cherry trees and the little shrine on the island. about 1,500 yen for an hour and it's a 5 minute walk from the station

While the local bacon works well in many recipes, I specifically want the crispy type. Where might I find this style of bacon?

if u have a costco membership the kirkland thick cut is the move, 4 packs of 500g for around 2500 yen and it crisps up proper in a cold pan. for smaller runs, precce in azabudai hills & the basement at isetan shinjuku both carry imported US & danish brands in the chilled case, just read the label for "thick cut" or "smoked" and not "loin". also worth knowing japanese bacon is often wet-cured so pat it dry before frying or it steams instead of crisping

kaldi coffee farm is hit or miss but their smoked bacon from denmark shows up pretty regular, the 200g pack runs about 600 yen. what actually works better for me is asking the butcher counter at peacock or life to slice the block bacon thick, like 5mm, they do it for free and it crisps way better than the pre-packed stuff. also fwiw cheap bacon crisps faster, the fatty supermarket kind at 300 yen a pack works fine if u cook it from cold in a dry pan and pour off the fat as it renders.

tbh the gyomu super store brand bacon is surprisingly decent for crisping up, its not thick cut but if you cook it low and slow it gets pretty crunchy. the key is the dry cure vs wet cure thing, wet cure steams. also check hanamasa if you have one nearby, they sell big packs of american style bacon thats actually smoked and firm.
