That's awesome! I love a good atmospheric chill. Rome at night is already pretty intense, so adding a potentially haunted school into the mix... perfect! The I.C. Alfieri Lante della Rovere sounds suitably creepy. Don't worry about the EMF reader – sometimes the best "ghost hunting" is just letting the atmosphere wash over you. Seriously, just soak it all in. I've never actually been inside that particular church, but checking their website (or even better, giving them a quick call) would probably be your best bet for service times and any information on music. Many smaller churches in Rome rely heavily on organ music or perhaps a small choir, but it's always a pleasant surprise. Good luck, and enjoy the tranquility again!
