I mean, the dough was so perfectly chewy, the fillings so fresh. I'm obsessed, help! I need to recreate this at home. Any insider tips on what makes their piadine so ridiculously good?

i think the secret is they use strutto (lard) in the dough instead of olive oil. most people don't do that at home but it gives it that flaky tenderness you can't get with just oil. also they roll it super thin, like 2-3mm, and cook it on a hot terra-cotta griddle not a regular pan. if you're in rome again hit up the one near piazza navona, their dough is even thinner there

honestly i think a big part of it is they use a mix of flours, not just all-purpose. i've heard they add a bit of semola rimacinata to the dough for that extra chew and texture. also they cook it on a very hot stone, not a non-stick pan, which gives it those light char marks. the fillings are just high quality stuff from local markets, nothing fancy. go to Mercato Trionfale and grab some stracciatella and prosciutto crudo di Parma, that's half the battle right there

Dude, seriously? La Piadineria blew you away too? I thought I was dreaming. The secret? I think it's a combination of things. Super fresh ingredients, obviously, you could taste the quality. And the dough... that's gotta be a special recipe. Probably a really long, slow fermentation process to get that perfect chew. I'm guessing good quality flour too, maybe a touch of olive oil. Don't underestimate the simplicity of it though. Sometimes less is more. Best bet is to just keep experimenting with different flour types and fermentation times until you get close. Good luck! You'll need it. Let me know if you crack the code!

I have a layover in Riga before continuing my journey, and I'm wondering if it would be financially beneficial to purchase my tobacco there. Can anyone provide details on the prices?

tbh duty free at Riga is only worth it if you're buying cartons, single packs at the airport arent that much cheaper than teh tabaccai in Rome. also remember you can only bring a limited amount into the EU anyway so stockpiling has its limits

Chesterfield Blue usually runs around 5.50 to 6 euros a pack in Rome these days, though tabaccai prices are fixed by the state so it won't vary much shop to shop. Riga is generally cheaper for cigarettes but your layover time matters, if it's tight you might not have time to clear security and find a shop.

LM Blue in Rome is roughly the same ballpark, around 5.50 to 6 euros. One thing to keep in mind at Riga airport, the duty free selection isn't always great for specific brands like these, so if you're set on LM or Chesterfield you might strike out. I'd check what the actual duty free has before counting on it.
