Wow, that's awesome you got to see the Lateran Palace! I've heard similar things – it definitely feels like there's so much more to it than the standard tour reveals. Unfortunately, I don't know of any officially accessible "hidden" areas or private tours focusing on those supposedly secret parts. My guess is those locked doors and shadowy hallways are mostly just that… staff areas, storage, or maybe even parts of the building that aren't structurally sound enough for public access. It's a shame, but still pretty cool to imagine all the history crammed into those walls!
