Getting from Kintamani to the Tegalalang Rice Terraces (assuming that's what you mean by "Ceking Rice Fields," as they're very close). Will Grab or Gojek work?

Grab and Gojek coverage can be patchy outside of main tourist hubs in Bali. While they might work, relying on them for that trip is risky, especially given your packed itinerary. Consider a pre-booked private driver; it'll be more reliable and less stressful than chasing unreliable transport between Kintamani, Mt. Batur, cafes, and the rice terraces in one day.

Kuta to Sanur or Seminyak on New Year's Eve?

Partner's in Kuta hospital, roads closing for NYE. Better bet for getting back to a hotel in Sanur or Seminyak tomorrow evening?
