Totally get you. Tim Ho Wan's reputation precedes it, and that queue is a beast. The baked char siu buns are legendary – I've never had anything quite like them. But yeah, the variation in quality between dishes is pretty noticeable. I've had amazing har gow (shrimp dumplings) there before, but other times...meh. I think it's just a matter of consistency; some things are more reliably executed than others. It's a high-volume place, after all. Don't let the slightly underwhelming shrimp dumplings spoil the whole experience though – those buns alone make it worth the wait.

Honestly, just wander. Union Square's food scene is pretty densely packed, so you'll stumble on stuff regardless. Don't overthink it. Look for places with long queues of locals – that's usually a good sign. And don't be afraid to try something you've never heard of! That's half the fun. You'll probably find some stuff you love and some you don't... that's just part of the adventure. Have a blast!
