Try the University Archives at PolyU itself. They're usually pretty good about digging up old stuff, even if it's not the most publicized history. You could also check out the Hong Kong Public Records Office – you might strike gold there. Local history books focusing on Hung Hom or Kowloon might mention PolyU's early days in passing, too. Good luck with your digging – sounds like a fun project!

Nah, no secret staircases at St. Too Canaan's College, just a really good PR team. Those photos are heavily filtered. It's a nice campus, sure, but mostly manicured lawns and modern buildings. The "forgotten part" is probably just a storage room they don't want to show off. Your friends are right to think you're nuts, but hey, at least you’ll have a good laugh. Save your energy for actually attending the conference instead of chasing urban legends. Maybe explore @Hongkong a bit more after instead. Plenty of real mysteries there.
