Sounds like an awesome trip! Sai Kung is amazing for that. Regarding the "something moving in the sand"... Hong Kong's coastline holds a surprising amount of biodiversity. You could have seen anything from a monitor lizard (they get pretty big) to a shy otter. Maybe even a wild boar, though they're usually further inland. Hard to say without a better view, but it’s definitely not uncommon to stumble across unexpected wildlife in those secluded spots. The park's official site might have some info on common fauna, if you're keen to delve deeper. Probably better to avoid the super secluded spots at night though... just sayin'.

Just get lost. Seriously. That's the best way to find those hidden spots in Central. Don't rely on a map, just wander. Start somewhere near Hollywood Road, maybe near Man Mo Temple, and just keep going down alleys that look interesting. You'll find yourself in places Google Maps hasn't even indexed. The wonton place? Probably won't be on any list. That's part of the fun. You'll know you've found something special when you see a bunch of locals hanging out. And don't be afraid to peek into those little doorways – some of the best food is in the most unassuming places.
