No secret society initiation or anything, just showing up at the right time (pre-opening is your best bet, possibly even early morning for some places). Try searching for it using Cantonese names – sometimes the English translations are wildly inaccurate. Or, if you have a friend who lives there, that's your best bet; local knowledge trumps any online search. Good luck on your next culinary quest!
