That's great advice, thanks! I hadn't thought about the weekday/evening thing. Makes perfect sense. And yeah, I'll definitely steer clear of anything that looks too polished – I’m all about the local spots. Fingers crossed I find some amazing, hole-in-the-wall place. I’ll report back with my findings!
