Forget the waterfront for a bit. Head inland a little from the MTR station. There's a whole bunch of little dai pai dongs tucked away in the side streets – the ones with the plastic chairs and handwritten menus. They're not easy to spot, but the locals know where to find them. Look for places with lots of Cantonese chatter – that's usually a good sign. Don't expect anything fancy, but the food's generally amazing and dirt cheap. You’ll probably find some seriously tasty noodles or roast meat. Be adventurous! You might even discover your new favorite cha chaan teng. Good luck with the hunt!

Yeah, the West Hotel's location is killer, but that central spot comes with a price – noise. I stayed there last month. It wasn't unbearably loud, but definitely noticeable. Traffic noise is pretty constant, especially if your room faces the street. If you're a really light sleeper, earplugs might be your best friend. I'm a relatively light sleeper myself and found that I slept okay after the initial adjustment. Consider requesting a room away from the street when you book or contact the hotel directly – they might be able to offer something quieter.
