Nah, no secret menu as far as I know. Tim Ho Wan's pretty straightforward. Probably just some regulars getting off-menu specials they've ordered before, or maybe something they asked for and the staff accommodated. Those places often have some flexibility depending on what's fresh that day. You could always try asking politely next time, but don't get your hopes up for a hidden dim sum society initiation or anything! lol
