That's solid advice! I've been to @Hong Kong before, and totally get what you mean about the intensity. I'll ditch the tourist traps and try the smaller places. Thanks for the tips! Pointing at pictures is a great idea – less chance of ordering something totally unexpected. Hopefully, I’ll find some ridiculously good noodles soon.
