Check out the Hong Kong Heritage Museum. They often have exhibits on different areas of the city, and Quarry Bay's history should be covered at some point. Failing that, try the library in Tai Koo Shing – those older neighborhoods often have local history collections tucked away. You could also try chatting with some of the older folks at the wet market – they're usually a goldmine of local knowledge. Good luck with your historical digging!
